buttermilk bread ~

I did a little baking yesterday ~ "about time", said Dear Hubby.   I made four loaves of bread.  Two buttermilk and two rye/wheat.  I thought I'd share the buttermilk one with you.  It is such a wonderful flavored bread and bakes up with a beautiful texture.  It uses white flour; which I know is frowned upon by us healthy nuts (I'm not really a good heath nut ~ but I'm trying) ... but hey ... every once in awhile my guy wants something different besides rye and wheat ... which I normally eat.
 


Here's the recipe: it yields 2 loaves

BUTTERMILK BREAD

2 Tablespoons Dry Yeast (.25 oz. dry package)

3/4 Cup Warm Water

1/2 Cup Butter

1 1/2 Cups Buttermilk

1/4 Cup Granulated Sugar *
*( I used 1/8 cup Splenda)

1/2 teaspoon Baking Soda

2 teaspoon Salt

5 1/2 Cups Flour

DIRECTIONS:

1.  Proof the yeast in the warm water.

2.  In a small saucepan place the butter and buttermilk.  Heat slowly until the butter has melted.  Cool to lukewarm.

3. Into a large bowl, place the buttermilk/butter mixture.  Add the yeast/water mixture.  Add 3 cups of the  flour, sugar, baking soda and salt. Mix well, gradually adding the remaining flour.  

4.  Turn out on to a lightly floured surface.  Knead for several minutes until the dough is soft and smooth.  Place into a greased bowl.  Cover with a kitchen cloth and allow to rise until doubled in size.

5.   Punch down the dough and divide into 2 loaves.  Place into two well greased  bread pans.  Allow to rise until the dough has risen about an inch above the pans.

6.  Bake in a preheated 375 degrees F (190 degrees C ) oven for 30 - 35 minutes.  
The loaves are done when nicely browned and hollow sounding when thumped.

We had a slice last night with our salad, grilled steak and cheesy potatoes and then again this morning made into toast along side some pork links and over easy eggs.   Yi Yi Yi ... I have to get back on my diet!!  I'm telling you ... it's not easy to try to lose weight when I LOVE to cook and bake!! AND EAT!!!

  3. Your bread LOOKS so-oo good. I can almost smell it from here. I'm crazy for rye so that's what we eat here, mostly. Or Oat bread. Take care.

    NO ONE could lose weight with YOU cooking. How ever SLIM does a pretty good job" LOL

  5. Ooo, the buttermilk bread sounds so good! I still use a lot of white flour too. Some things, like French bread and pizza crust, I'm not allowed to make any other way. :)

  6. Mercy Child, that bread looks fantastic and I see you made the BIG loaves. Wow, Buttermilk bread. I was just telling Bill we need to bake bread again...love, LOVE the smell and the taste beats all.

  8. That bread looks really good. I have never liked buttermilk but I bet it would not even be noticable to the taste after baked. I made home made bread and cinnamon rolls when the kids were all little. My knee they put the steroid shot is giving me trouble but it could have been partly my fault. When I went down the second night after getting the shot one day. Didn't think it was hurt but now not so sure. I need to diet and lose at least 30 pounds or more.
