puff pastry left over chicken pizza~

Well tonight is the big football game that everyone and anyone who lives in Wisconsin is waiting to see on Monday Night Football.  The rivals ~ our Green Bay Packers and the Minnesota Vikings.  I could really get into it here on my blog on how much I love football season; but I'll spare you.  One thing I can say though is I AM SO HAPPY WE DON'T HAVE THE BAIT SHOP AND I CAN WATCH A GAME UNINTERRUPTED AGAIN!!!!!!!!!!!!!!!! That was one little pet peeve of mine when we had the shop... when people would go fishing during prime time football season.  Oh well... I don't have to worry about that anymore. lol

I didn't know what to make up for supper tonight so I decided to take the easy route and make some goodies up ahead of time so I'm not standing at the kitchen sink tonight when the game comes on. 

I made up a recipe today ~ I'm calling it Puff Pastry Left Over Chicken Pizza. I made it earlier this afternoon so that all I have to do later when the game is on is warm it up and serve as finger food.  It was pretty easy to toss together; even though it sounds like a lot of ingredients and would take a long time to do.  I did have to cut into it once it was baked and give it a taste test before tonight.  I was very pleased.

Here's how I made it:

PUFF PASTRY LEFT OVER CHICKEN PIZZA















The dough:

1 1/2 Cup Flour
1 Cup of soft Margarine (I used "I Can't Believe It's Not Butter" soft spread)
1/2 Cup of Sour Cream

Mix the flour and margarine spread together until crumbly, then add the sour cream.  Mix well and chill in the refrigerator while getting the rest of the ingredients together for the topping.

the Topping:

1 Tbsp. Tuscan House Italian dressing
about 1/4 of a block of cream cheese diced into about 1/2" cubes
1 small chopped onion
1 small peeled and diced ripe tomatoe
1/4 Cup chopped stuffed green olives
1 Cup deboned, chopped up, cooked leftover chicken ( I suppose 1 breast, cubed and microwaved on high for a minute would suffice if you don't have leftovers...lol.)
about 4 fresh button mushrooms, sliced
italian seasoning
oregano
dried basil
garlic powder
1 Cup grated Mozarella Cheese

Step by Step

Preheat oven to 350

Mix up the dough and refrigerate while getting the topping ingredients ready.

Spread the dough out evenly on to a non greased pizza pan or jelly roll pan.

Add the toppings ~ starting with the Tuscan House Italian dressing; spreading it all over the dough.  Then add the cubed up cream cheese pieces and the chicken, onions,olives, mushrooms and diced tomato.

Sprinkle on the dried herbs.  I  used Italian Seasoning, Dried Basil and Oregano and a dash of Garlic Powder

Top with the grated cheese and bake about 25 minutes until the top is bubbly and the crusts edge is golden browned.
